Purple Flame Blanc de violette is made in the traditional French method with white grapes being fermented, triaged and placed in bottle to re-ferment for a further 18 months on lees, before being disgorged, dosaged and prepared for consumption.
The base wine comes from organic Chenin grapes from Margaret River's oldest certified organic vineyard. You might notice characters of yellow apple, quince, honeydew, pear, citrus and lime with a hint of grass coming from the grapes along with a little bit of creamy nut characters coming from the yeast. Its a dry style with a residual sugar of 5g/l. The beautiful purple colour of the wine is derived by the infusion of natural botanicals into the wine to help preserve it and to minimise the use of sulphites.
